Quiche Lorraine

Quiche lorraine

This quiche is great to serve at a brunch, or for a light supper.
 
   
Ingredients  
9 inch unbaked pie shell
2 cups (8 ounces) shredded Swiss cheese
8 slices bacon, cooked and crumbled
3 tablespoons sliced green onion
8 eggs, slightly beaten (or use l carton egg substitute, such as Egg Beaters)
l cup light cream (or half and half)
1/2 teaspoon salt
dash of pepper
dash of nutmeg
4 tablespoons grated parmesan cheese

Directions  
  1. Beat eggs, and stir in all other ingredients except parmesan cheese.  Pour into pie shell.  Sprinkle with parmesan cheese. 
  2. Bake in preheated 375 degree oven for approximately 40 minutes, or until a knife inserted near center comes out clean.  I recommend covering the edges of the crust with aluminum foil for the first half of baking to prevent over browning.
  3. Let quiche stand 10 minutes before serving.
