Tortellini Soup

This is a very tasty soup for cooler weather - thick and hearty. The recipe makes a large amount, but it is just as good reheated.

l lb. Italian sausage

2 cloves garlic

l cup chopped onion

5 cups beef broth (3 cans)

1/2 cup dry red wine (can substitute water)

2 cups chopped canned tomatoes

l cup thinly sliced carrots

1/2 teaspoon oregano

8 oz. can tomato sauce

Brown sausage in large dutch oven and drain. Saute garlic and onion with sausage as it is browning. Combine all other ingredients and simmer 30 minutes

Add:

l teaspoon basil

1-1/2 Tablespoon dried parsley

16 oz. package cheese tortellini

Simmer until tortellini is tender, up to 30 minutes.



Add:

1-1/2 cup sliced and halved zucchini

Add to soup during last few minutes of simmering.

Ladle into soup bowls, and pass grated parmesan cheese to top each serving. Delicious!.
