l lb. Italian sausage 2 cloves garlic l cup chopped onion 5 cups beef broth (3 cans) 1/2 cup dry red wine (can substitute water) 2 cups chopped canned tomatoes l cup thinly sliced carrots 1/2 teaspoon oregano 8 oz. can tomato sauce Brown sausage in large dutch oven and drain. Saute garlic and onion with sausage as it is browning. Combine all other ingredients and simmer 30 minutes Questions? Comments? Click here to contact me! Add: l teaspoon basil 1-1/2 Tablespoon dried parsley 16 oz. package cheese tortellini Simmer until tortellini is tender, up to 30 minutes. Add: 1-1/2 cup sliced and halved zucchini Add to soup during last few minutes of simmering. Ladle into soup bowls, and pass grated parmesan cheese to top each serving. Delicious!. |
